Tasting Notes: This 1er Cru Chablis from rising star Thomas Pico is one for the books. His fervent commitment to organic farming and natural winemaking is rather rare in this region of France, though we fully support everything he’s doing. This wine is precise, savory, and super food-friendly. Notes of lemon rind, chalky wet rocks, and briny sea salt ooze from the wine’s razor-sharp palate. This is one of our favorite finds this year.

The Chablis 1er Cru Vaillons de Pico is made from organically grown grapes from the locality of Séchet bought from Gérard Duplessis. The wine offers beautiful aromas of lemon oil, tangerine and bread dough. A round and greedy profile, with a beautiful purity. It is excellent.
The winemaker : Thomas Pico quickly acquired a well-deserved reputation as one of the brightest rising stars in the Chablis firmament. Pattes Loup is a kind of exception in Courgis. Its plots are distinguished by their soft, ploughed soil, in a region where the vines often resemble a barren moonscape.
