Tasting Notes: Extracted, rich and earthy, this 2019 Howell Mountain Cabernet Sauvignon is full- bodied, and richly ripe in black fruit, coniferous nose with violet, redcurrant and red-plum aromas, leading to a succulent palate that carries attractive tannin structure. Focused and powerful. Elements of sage, dried herb and cedar provide contrast the complexity.
Notes: Grapes were picked around 27.8 Brix, by hand in the early morning hours. After a standard 3-day cold soak for increased color, and an 18 day fermentation with extended skin contact at high temperature between 89-91 degrees for maximum extraction the wine was pressed out around 3 brix into100% French oak barrels. The wine then continued to ferment in barrel over the next 3-4 month until it goes dry. This process typically softens the tannin composition, and preserves the freshness of the wine.
