Jacob Rispens tends 300 Lacaune sheep — 73 more than the population of his hometown, Morra, nestled in the far north of the Netherlands near Friesland’s barrier islands. Their rich milk is crafted into compact 10-inch wheels of cheese with the help of Betty and Martin Koster of L’amuse, renowned for their expertise in Dutch cheese. It's fairly rare, as most gouda comes from cow’s milk, with only a tiny fraction made from sheep’s milk. It offers sweet aromas of buttermilk and dry hay, with a flavor remarkably like salted caramel. Great shaved over roasted vegetables, grated on pasta, or savored on its own with a crisp apple and nuts. Made from pasteurized milk and aged for about six months.
