Tasting Notes: Serpentières has always been Guillemot’s proverbial feather in the cap, the cuvée that is the most peacocky, juicy, and delicious in its youth, and that can seemingly age with perfection forever (they’ve been bottling this vineyard for seventy-nine years straight, and there’s still not a tired bottle in sight). The nose is smoky and herbal, the palate awash in robust black fruit with a most satisfying lip-smacking finish. The Guillemot family’s pride is fully justified!
Food pairing: This wine pairs beautifully with roast duck or chicken, herb‑roasted pork, and a wide range of mushroom dishes, and it’s especially at home alongside classic preparations like coq au vin. Its structure and savory depth also make it a natural match for rich, soft cheeses such as Époisses or Délice de Bourgogne.
Winery Story: Domaine Pierre Guillemot is a seven‑hectare, classically styled family estate known for consistency and longevity. Reds ferment in wooden tanks with modest new oak, and whole clusters are increasingly used in vinification.
