Eylander is made by a small farm that has about 200 mostly Swiss Brown cows in the town of Strijen on the southwestern island of Hoeksche Waard which is along the Holland's Diep estuary. The dairy farm works in collaboration with one other farm for the crops and feed for the cows. Production is organic, which shows in the amazing quality of the milk. Herve Mons ages this cheese 15 - 18 months. It has a delicious unique, savory flavor of custard, nuts, roasty – almost chocolaty flavor.
