The Staffa Verdicchio dei Castelli di Jesi Classico Superiore comes from 5 hectares of vineyards located about 400 metres above sea level. These are 20-year-old vines planted in calcareous clay soils that, rich in calcium carbonate, give the wines a very unique flavour. They are cultivated using ecological agriculture and biodynamic treatments, and the harvest is carried out manually when the grapes reach optimum ripeness.
In the winery, the La Staffa Verdicchio dei Castelli di Jesi Classico Superiore grapes are gently pressed and the resulting must ferments in stainless steel tanks for 3 months before being bottled.
