Tasting Notes: This appellation is often overlooked, a crime! An intense mineral and citrus character with strong hints of complex nutty, buttery flavours. Very well balanced with crisp acidity and good texture, this is a concentrated yet elegant wine.
Notes: This Pouilly-Fuissé is produced in the traditional Burgundy style, with entirely manual grape harvesting. The grapes are gently pressed using a pneumatic press. The must is then fermented in French oak "Foudres" of 25 hectolitres using only natural yeast. The wine goes through malolactic fermentation in oak and is matured for a further 9 months.
Food pairing: Fantastic with fish starters, veal and white meats in cream sauces.
The Domain: Jean-Paul Paquet comes from a multi-generational winemaking family rooted in the Mâconnais region of Burgundy. His grandfather settled there in 1955, and his father later acquired a small seven-acre domaine in Pouilly-Fuissé in 1971. Jean-Paul took over the estate in 1978, expanding it over the years and purchasing additional vineyards, including one near Château de Chaintré, which produces Mâcon-Chaintré and Bourgogne Chardonnay.
His winemaking philosophy is deeply traditional. His estate harvests by hand, uses old oak barrels to avoid overpowering the wine with oak flavors, and follows organic farming techniques. His son, Yannick Paquet, joined the family business in 2003, eventually taking over the estate alongside his wife, Ophélie.
Paquet’s wines, particularly Saint-Véran and Pouilly-Fuissé, are known for their finesse and elegance, reflecting the limestone-rich soils of the region. His approach to winemaking is meticulous—he believes in “watching and listening” to the grapes as they grow and to the wines as they mature in the cellar
