Tasting Notes: The Sainte Claire Chablis expresses with a great deal of finesse the typicity of its Chablis soil: the Kimmeridgian. Made from Chardonnay grapes, this vintage expresses the singularity of our wines through its strength, precision and freshness.
Notes: Kimmeridgian: Alternate layers of limestone and marls containing fossilized marine bodies which give Chablis its fresh minerality. Maturation: Pneumatic press, natural yeast, temperature controlled alcoholic fermentation then aged in stainless steel tanks for 9 months; Malolactic fermentation completed

This first step allows us to observer force and reflection, to better understand this work philosophy. A learning every day for the domaine and its teams. Today, 60 hectares are certified organic farming and biodynamic 40 hectares. What makes Domaine Jean-Marc Brocard one of the first wine producers in organic farming in Chablis and Burgundy.
