Alcohol: 13.5%
Grape(s): Chardonnay
Localization: Burgundy, France
Tasting Notes: This wine has a remarkably complex bouquet, blending fruity, floral and spicy notes with a substantial mineral touch. Structured on the palate, opening up with age to give a powerful, generous wine.
96 points Jasper Morris: The vineyard was largely planted by William Fèvre’s father in the decade after the war. The 2021 Les Clos was made with 40% wood, but has recently been racked and assembled, so not clear. This is relatively classical with the effortlessly superior bouquet of Les Clos. A softer rounder style of fruit here. Additional intensity though behind, with a deep white fruit, liquorice and still some youthful bitters to complete. Drink from 2028-2036.
Food Pairing: Pairs well with shellfish and seafood, grilled or in a cream sauce, as well as with poultry and other white meats.
The Domain: Founded in 1959, Domaine William Fèvre is at the heart of the Chablis vineyards. Since its founding, Domaine William Fèvre has been taken up with the desire to produce indisputable genuine and fine wines, bringing along a very personal experience in Chardonnay. All the efforts have but one goal – to finely express the subtle most variations in the greatest Chablis crus. Today, Domaine William Fèvre is one of Chablis's most established and renowned estates.
Domaine William Fèvre joined the Henriot family portfolio in 1998.
“In my 20 years with William Fèvre, I have aimed at crafting wines that fully express the terroir of Chablis through the use of organic and biodynamic viticulture and meticulous care in the vineyards. Minerality is a Chablis trademark and it shines through with a thousand nuances in each of our wines.” – Didier Séguier, William Fèvre Director & Cellar Master
