Tasting Notes: The nose develops aromas of peach, apricot, almond and pepper. The palate is structured, ample, balanced, the finish is chiselled with notes of white pepper.

Notes: indigenous yeasts, fermentation in vats (70%) and barrels (30%) without chaptalization or acidification, aging on fine lees for 10 to 15 months and bottled by us .

Food pairing: Fish (pike with white butter, pikeperch back in cream, salmon) Scallops, Roasted or creamed Bresse chicken. Gratins, Snails, Frogs. Goat cheese from Mâconnais, Comté.

The Domain: Our Estate currently covers 9.5 Ha divided into 23 plots in three communes, Viré, Montbellet and Burgy and 4 designations of origin:

  • Viré-Clessé: 5 Ha 60
  • Mâcon-Villages and Mâcon: 2ha 22
  • Red Burgundy: 0 ha 60
  • Mâcon-Burgy: 0 ha 80

My grandfather Victor Chaland began cultivating vines in the 1930s, my father Jean-Noël took over in 1967 with his first vintage vinified at the Domaine. It was in the year 2000 that I created Domaine Sainte Barbe with an area of ​​4 hectares.

Our vineyard has always been maintained and plowed without the use of synthetic herbicides, it is with this in mind of respecting the soil and expressing our terroirs that the Estate obtained certification in Organic Agriculture in 2003.

The harvest is 100% manual.
