Mix & Match with Blanc Fumé, Pur Sang, Le Mont Damné
From a parcel with some of the highest concentrations of Silex flint in the region, this is Dagueneau’s most mineral white. The mineral essence and concentration really are more like Grand Cru white Burgundy than like most Pouilly Fumé and the structure and balance assure it can evolve until it is 12-15 years old. Barrel aging adds texture and depth to the acute high-toned, mineral-focused fruit. Don’t serve this too cold, and be sure to let it air in a decanter to unfold it’s wings. There isn’t another white like this on earth and every sauvignon blanc fan should experience it.
