This unique cheese goes throught three stages of production. It starts as a simple washed rind tomme, after 12 months mites are introduced which it allows it to mature over another 12 months. When mature it is massaged with oil to remove the mites. The resulting cheese is complex with notes of stone fruit mixed with a big brothy flavor.
