This completely dry white, 100% chenin, is both indulgent and chiseled. Light yellow with green reflections, it has aromas suggesting green apples, pear skins, lemon zest and slate. Bosc pears, lemons and subtle baking spices on the front palate lead to a silky and vibrant back palate. The long, rich and intense finish leaves lemon peel flavors coating the palate. The zesty acidity and texture make this a great food companion. It will also keep nicely for 3-4 years over which a slightly honeyed, baked apple pie character will emerge. Try the classic pairing with a loire valley goat cheese like Valençay.
