Tasting Notes: This is one of the most consistent and best of the non-classified Sauternes – very fruit-forward, as is common for the wines of Preignac, complex and age-worthy, with a vivacious bouquet. This carries a lovely floral apple-pear character, with a touch of honey. Very full-bodied, with a lengthy finish.
Notes: Manual harvest with successive selection. Vinification - must cooled on leaving the press, racking and fermentation in stainless steel vats at low temperature. Ageing in vats for 18 months
The Domain: Château Les Justices is a 8,5 hectares estate, is situated near the Ciron river below Preignac; part of it is on a plot of deep gravel and silt and is planted with Sémillon and Muscadelle, and part of it on a plot of gravel and red sand on source rock where Sémillon and Sauvignon are also planted.
Gilette is a speciality of the Medeville family since 1710 – unique in Sauternes, since the wine is aged for over twenty years in little cement tanks, and then another two to three years in bottle before it is released. This unusual way of working reinforces, by its long reduction, the natural fruit flavors of the wines of Preignac, with high citrus notes, and makes them almost immortal, carried by a sensational aromatic complexity and an ever-lasting finish.
