Tasting Notes: This wine shows a surprising amount of depth and character for such a low dosage. Dry, and focused, yet balanced with a brioche sporting complexity showing a pleasing complexity and depth to counter the racy acidity. With finesse and character that shows how well the brothers can balance elegance and tension the wine.

On the nose, it offers layers of red and green apple alongside zesty fresh lemon, this focused but restrained acidity, highlights flavors of apple, pear, generous chalky minerality, and subtle notes of brioche.

The fine, persistent bubbles lend a sense of refinement and the low dosage complements the wine’s fresh and vibrant character without washing out its complexity. With 20 months on the lees, this Champagne captures both depth and brightness. A versatile and enjoyable expression of Côte de Sézanne terroir. The dosage of 2g is prepared with cane sugar.

The Domain: Our goal is to put nature back at the heart of our winemaking process. To showcase honest Champagne wines whose terroir fully reveals its character. To move toward a path oriented toward gentle plant-based care methods, using permaculture principles to better live in harmony with our environment.
A greener, more self-sufficient viticulture, and thus committed to cultivating living soil.

Gaël DEKEYNE Passionate about wine and gastronomy, I am convinced that nature can reveal all its complexity through a commitment to an ever greener, increasingly autonomous path. Living wines for beings of the same spirit. Questioning is constant to bring ever more innovative solutions. The quote that defines me comes from Pasteur: "Wine gladdens the human heart and makes it capable of passion."

Baptiste DEKEYNE "Look deeply into nature, and then you will understand everything much better." Albert Einstein. Passionate about agroecology, I am constantly enriching my knowledge to rediscover my winemaking profession, inherited from previous generations, and thus fully flourish, in accordance with my values. Observe. Experiment. Highlight the differences of our terroirs, even in our champagnes. Action then takes on its full meaning, its full importance for those who love tasting. Family, nature, wine, and sharing—simple things that are close to my heart.
