Tasting Notes: Fresh herb and summer meadow aromas lead to a palate rich with clean lemon and lime, complemented by tropical hints. The biscuit texture adds depth, finishing with a smooth, mineral complexity and excellent length. 

Notes: The grapes for this wine are hand-harvested in early October to ensure optimal ripeness, followed by a 48-hour cold maceration that enhances aromatic complexity by slowing yeast activity. Fermentation takes place in large 3,000-liter oak barrels with indigenous yeasts, preserving the natural character of the fruit. The wine is then aged for six months in oak on fine lees, adding texture and depth. Rooted in clay, sandy loam, and marl soils at 400–500 meters elevation, with vines averaging 30 years old, the terroir imparts minerality and structure that define the wine’s distinctive style.

Food pairing: This Sauvignon Blanc pairs wonderfully with a wide range of foods, from grilled fish, shellfish, and sushi to fresh vegetables like asparagus, salads, and spring peas. Its crisp acidity and herbal notes also complement lighter grilled meats or poultry, while goat cheese and other fresh cheeses highlight its minerality. For a more adventurous match, Asian dishes with ginger, lemongrass, or subtle spice bring out the wine’s lively, juicy character.

Winery Story: The Strauss winery has been family-owned since 1810. The name "Strauss" first appears in the family chronicle in 1948, when Karl and Johanna Strauss took over the business, which their son Karl and his wife Juliane Strauss continued to run.

Their sons, Karl and Gustav, are now successfully working for the winery. While Karl handles sales and company logistics, and his wife Sabine primarily focuses on sales and tastings at the winery, Gustav manages the vineyards and is responsible for the cellar.

Gustav and his wife Bettina have established another business with their Tscherne-Strauss winery. Five double rooms with a wellness area and a dining room where Bettina caters to the culinary needs of her guests are a wonderful addition to the main building.
