Tasting Notes: Lifted spice and ripe mulberry/blackberry aromas complement chocolate, cedar and cinnamon on the nose. Well-integrated oak tannin provides flavors of clove and supple texture, which supports the rich plum, blackberry and mocha. The overall structure is supple and generous with fine-grained tannin and a lingering finish.

Notes: Jip Jip Rocks wine is synonymous with premium wines from South Australia’s Padthaway wine region. The vineyard is planted in some of the world’s oldest mineral rich soils and in the most temperate of maritime climates. The Jip Jip Rocks vineyard consistently produces excellent fruit quality from low yielding vines.

Only the best parcels of fruit are carefully selected throughout the vineyard and utilized in the Jip Jip Rocks label. Great attention to detail with the integration of fruit flavors and fine oak barrels helps produce classic handcrafted wine styles.

Food pairing: Pairs well with venison, ribeye steak, lamb.

The Domain: Since 1851, five generations of the Bryson family have been involved in agriculture and the unique and fertile land of South Australia.
The family business was built by Clive and Elizabeth Bryson, who have now handed the day-to-day operations over to the next generation - sons Andrew, David and Paul.

The Bryson Family

In the early 1990's, the Brysons decided to take the plunge and plant vines on their property. Initially, their plan was to sell these grapes to the big wine producers. However, after a few vintages, the desire to see the fruits of their labor was too great to resist. In 1998 they held onto a small selection of their fruits and sent it to the Cape Jaffa Winery. Their own wine - named for the Morambo creek that meanders through the property - was born.

The vineyards are located in the historic Padthaway valley, 300 km south of Adelaide. The farm consists of 470 acres, divided into two parcels, equal in size. Annual production is around 30,000 cases. The vines enjoy a cool climate with plentiful winter/spring rainfall; limestone subsoil provides excellent drainage. The grapes cultivated here are Chardonnay, Cabernet Sauvignon and Shiraz.
