Tasting Notes: Illuminati’s Pecorino is fragrant and rich in ripe fruit, white flower tones, almond, field herbs, and citrus. It fills the mouth well, powerful, and very persistent: a correct balance between structure and softness, thanks to freshness and sapidity that accompany the long finish. It is a wine of good longevity. Coincidentally, Pecorino cheese is a good match for seafood salads, fried zucchini blossoms, anchovies, and king prawns.
Notes: The Pecorino vineyard is trained with a pergola abruzzese system with a density of approximately 5.200 stocks per hectare. The rows are southwest-oriented. Located in the region of Controguerra. The Pecorino grapes are hand-picked after an accurate selection in the second decade of September, depending on the climate conditions. Grapes are stemmed and very softly crushed; the must is statically decanted before being poured into thermo-conditioned stainless steel thanks to fermentation at a controlled temperature ranging between 16° and 18°C. Approximately 10% of the must is fermented 4 months in barriques so to release a moderate “boisè” and a finer character.

The winery is located in Controguerra, a picturesque area nestled between the Gran Sasso mountains and the Adriatic Sea. This unique location provides an ideal microclimate for growing grape varieties like Montepulciano, Pecorino, and Trebbiano. Dino Illuminati, a key figure in the family's history, played a significant role in gaining recognition for the region's wines, including the prestigious DOCG Colline Teramane.
Today, the winery spans 130 hectares and is led by Stefano Illuminati and the latest generation of the family. Their commitment to sustainability, experimentation, and excellence has earned them international acclaim, with their wines celebrated for their quality and character.
