Tasting Notes: A very fresh, lively and mineral nose. Notes of flint, green apple, lemon.

Notes: Fermented with indigenous yeasts for 15 days at 18 to 22°C. Malolactic fermentation for 15 days at 18 to 22°C. Aged in stainless steel on fine lees for 6 to 12 months.

Food pairing: An excellent apéritif, enjoyed with asparagus, salads, grilled fish, shellfish, and poultry dishes. Pairs well with spicy foods, such as curry.

The Domain: Domaine Ellevin is a family-run winery in Chablis, Burgundy, with a deep-rooted history in viticulture. The Ellevin family has been working the vineyards for generations, but it was in 1975 that Jean-Pierre Ellevin developed the estate, specializing in vinifying Chablis and dedicating it entirely to Chardonnay.

His son, Alexandre Ellevin, joined the domaine in 2003 after studying oenology and traveling extensively, including to Australia. He took over winemaking responsibilities, continuing the family's pursuit of high-quality wines. The estate spans 16 hectares, cultivating exclusively Chardonnay vines, producing elegant, dry wines with distinct yellow-green reflections.

Domaine Ellevin is committed to sustainable farming, using plowing techniques to limit the use of chemicals in the vineyards. Their wines include Petit Chablis, Chablis, and Premier Cru selections like Vaucoupin and Vosgros, with most fermentation and aging done in stainless steel, except for older vine expressions that see time in oak barrels.

The winery is located in Chichée, southeast of Chablis, with vineyards extending over both banks of the Serein River. Their dedication to quality and tradition has made them a respected name in Chablis winemaking.
