Tasting Notes: Aromas of black and red fruits with flavors of blackberry, blackcurrant, redcurrant and raspberry. Has a spicy, black pepper, character and as it ages develops smoky aromas, with notes of licorice, cloves, leather, coffee, caramel, vanilla and dark chocolate.

The Domain: The vineyard is divided into 2 islets, around the Bastide de Fave on the one hand, and above the chapel of the Prieuré Notre-Dame on the other.

The vineyard around the Bastide
3 hectares of Syrah, Rolle and Cinsault established around the Bastide de Fave on terraced hillsides facing east. This site, protected by a circle of hills culminating at an altitude of 360 meters, offers clay-limestone soils from a subsoil of limestone with dolomite. Ideally exposed and sheltered from the prevailing wind, the mistral, these plots mature late, with strong thermal amplitudes, making it possible to achieve optimum phenolic maturity for red wines, and to maintain a beautiful freshness for the wines. whites.

The Notre Dame vineyard
5 hectares of Syrah, Grenache and Cinsault established above the chapel of the Prieuré Notre Dame, near the village of Brue-Auriac, on hillsides facing the North-West at an altitude of 300 metres. The plots are located on a subsoil of lacustrine limestone with yellow travertines which ensures perfect drainage of the plots. These plots, earlier than those of the bastide, allow us to quickly reach optimal aromatic maturity for the production of the estate's rosé wines.
