Notes: After primary and secondary fermentation in glass fiber tanks, the wine is aged for 8 months in 228-liter and 300-liter barrels (a common aging method in other regions where vin jaune is used in the Jura region). The Domain: As in any story, there are unexpected encounters that shake up the codes and change direction.

After a year in medical school, it was finally his summer “job” at Fruitière Vinicole d’ARBOIS that introduced him to the profession of winemaker and gave him the desire to train in this field.

It all started in 1998 with a BTS Viticulture/Oenology at the CFPPA in BEAUNE (21) and an apprenticeship at Domaine Denis Père et Fils in PERNANS-VERGELESSES (21). With his diploma in hand, he had the opportunity for four years to deepen his knowledge at Domaine de Montbourgeau at ETOILE (39).

Very quickly, the desire to have one's own farm was felt. He reached this first milestone in 2003 by renting 1 ha of vines which he would later purchase and by integrating the Fruitière Vinicole d’ARBOIS (FVA) as a cooperator.

For several years, he therefore combined work as an employee and operator while he expanded his surface area. In 2012, he was finally able to devote himself entirely to his 7 hectares of vines and develop different cultivation practices.

However, gradually the desire to vinify your harvest and present your products is becoming more and more insistent. he therefore decided in 2017 to leave the FVA to embark on a new professional and family adventure, that of Domaine Les 5 Wy…
