Tasting Notes: Notes of white blossom and preserved apricot perfume this fruity yet chiseled Chablis sourced from organic grapes. Despite a hot, dry vintage, it has a ripe, fruity demeanor balanced by a spine of acidity and a steely, penetrating finish. Approaching peak now, the wine should improve through 2024 and hold a few years further. 

Food Pairing: Drink as an aperitif and with salmon, asparagus, grilled vegetables and goat's cheese.

Notes: This is very traditional Chablis from a prestige 1er Cru vineyard, the ‘Mont de Milieu’. Fermentation and maturation is classically modern being coldly fermented to capture the purity of fruit. Maturation in tanks and avoiding any barrel aging, preserves the fresh steely flavors and unique influence of the chalky vineyard soils.

The Domain: Domaine Gautheron is situated in the village of Fleys, east of the town of Chablis, and overlooked by the steep slopes of Les Fourneaux. This estate of only 25 hectares has been in the Gautheron family for five generations. The Domaine makes traditional Chablis, with fermentation and maturation avoiding wood to preserve the fresh steely flavors and unique influence of the chalky vineyard soils. The old vine cuvees exceed 65 years old and are partly mature in oak. Since 2009 a 0.4ha plot of organic vineyard has produced the cuvee Emeraude.
