Tasting Notes: Fourchaume is a large (100ha) Premier Cru located just to the Northwest of the strip of Grand Crus that sit in the very heart of the appellation. Fourchaume is considered, along with Montee de Tonnerre, to be the finest Premier Cru land in Chablis. As with all wines from this domaine, this is produced with hand-harvested fruit and is bottled unfiltered after fermentation and aging in tank.

The Domain: Domaine de Chantemerle was founded in the 1960s by Adhemar Boudin, the father of winemaker Francis Boudin. It wasn't until the 1970s when the family decided to produce wine full-time; in 1981, Francis joined his father and began to cultivate the family's Chardonnay vines in Chablis.
The Boudin family maintains some 35 acres of vines yet produces just three Chablis wines: a "straight" Chablis, sourced from vineyards in the villages of Villy and Chapelle; a premier cru 'Fourchaume'; and a rare premier cru 'L'Homme Mort."
Crucially, Francis Boudin ages his wines exclusively in stainless steel tanks. He believes that the influence of French oak barrels can mask the natural aromas and texture of Chardonnay from Chablis.
