A Blend of Tradition and Innovation
Crafted from a blend of sheep and cow's milk, with approximately 33% coming from the Basco Bernaise sheep breed, Gabietou pays homage to the age-old practice of taking animals to higher elevations during the summer months to graze on the lush, fragrant flora of the Pyrenees. Unsatisfied with existing mixed-milk cheeses, Gabriel set out to create a cheese that would capture the essence of this region and its time-honored traditions.
A Living Cheese
After its initial aging of at least four months in the Pyrenees, Gabietou embarks on a journey to the United States, where it undergoes further aging under the watchful eye of the Mons team. In a controlled environment, with precise temperature and humidity levels, this living cheese is aged on wood planks, allowing it to develop its unique character and complexity.
