Tasting Notes: This Chardonnay opens with vibrant primary flavors of green apple, pear, and citrus, delivering a crisp and refreshing profile. Layered beneath are intriguing secondary notes of beeswax, wild mint, and fresh baking bread, adding depth and aromatic complexity. The texture is mineral-driven, offering a dynamic interplay between richness and acidity that keeps the palate engaged. It finishes smooth and buttery, with a lingering warmth that invites another sip.
Notes: This wine was barrel fermented without inoculation and underwent full malolactic fermentation. It was aged for 18 months on lees in 500-liter French oak puncheons that had been used four or five times previously. Finally, it was bottled unfiltered, preserving its natural character and texture.
Food pairing: Seafood (especially shellfish), Roast poultry, Creamy pasta dishes, Rich or decadent fare like mushroom risotto or lobster bisque.
