Localization: Castilla y León, Spain

Tasting Notes: Green-tinged straw. Fresh pear and honeydew aromas, joined by suggestions of white flowers and herbs as the wine opens up. Pliant orchard and pit fruit flavors show good depth and an enlivening suggestion of candied ginger. Closes smooth, broad, and quite long, delivering subtle sweetness and a resonating pear note. The palate is broad and generous but still fresh with acidity, and the fruit is still primary in character, but with savory accents providing complexity from the margins.

Notes: Soil: 900 meters / sandy clay with abundant gravel. Hand-harvested into small boxes, bunches hand sorted at the winery again prior to processing. Destemmed & lightly crushed prior to fermentation with native microbes, 2 weeks of skin maceration. Aged for 8 months in a combination of 80% French and 20% American.
