Tasting Notes: The La Staffa Pet Nat Mai Sentito is made with the Verdicchio grape, this time with a small addition of Trebbiano grapes. The name ‘Mai Sentito’, or ‘Never before tasted/heard of’ refers to this odd combination of grapes. This is a spumante wine, fermented with its own yeast in an ancient way, and is distinguished by a great fruity crispness, underpinned by the characteristic flavor of the winery’s wines. A fresh and convivial wine, it expresses the striking features of the Marche.

Notes: Grapes are picked into small boxes, and pressed immediately. Fermentation at controlled temperature in steel for 20 days, stop on fine lees for 4 months, and fermentation in bottles. Refinement at least 6 months in the bottle before its release. 

The Domain: Riccardo Baldi, an engineer and the owner of La Staffa, takes advantage of the intriguing mix of terroirs in the Castelli di Jesi area, between the Apennine hills and the Adriatic Sea, to produce organic wines that are extraordinary value for money and every year they get more and better reviews from experts.

 The Staffa Verdicchio dei Castelli di Jesi Classico Superiore comes from 5 hectares of vineyards located about 400 meters above sea level. These are 20-year-old vines planted in calcareous clay soils that, rich in calcium carbonate, give the wines a very unique flavor. They are cultivated using ecological agriculture and biodynamic treatments, and the harvest is carried out manually when the grapes reach optimum ripeness. 

In the winery, the La Staffa Verdicchio Dei Castelli di Jesi Classico Superiore grapes are gently pressed and must ferment in stainless steel tanks for 3 months before being bottled.  

The Staffa Verdicchio dei Castelli di Jesi Classico Superiore is a cuvée from several vineyards. A mosaic of different terroirs that give the wine a strong personality backed by good freshness and flavour.
