The Domain: Collina San Ponzio’s vineyards are located in the small towns of La Morra and Barolo (in CRU FOSSATI Area), with the area of 3.5 hectares. The grapevines are more than half a century, which are essential for high quality wine. Through their low yield, they can produce extraordinary bunches. Balocco Family manage the cultivation process from the beginning to the end. During Winter, there is the phase of “dry pruning” and trimming, to regulate the grapevine’s production and protect it in the course of time. In Spring, it is necessary to lift the branches and tie them up. One of the most important Summer procedures is the green harvest, that consists in removing the excess bunches. Close to 30% of the bunches are removed and left on the ground, to let the other bunches reach a perfect level of maturation, with the right amount of nutrients. Among the grapevine rows the grass naturally grows. Some copper and sulfur based products are used only when it is in absolutely necessary. We never use any kind of chemical fertilizer, and we manure every three-four years only. We harvest the grapes by hands one by one. The harvested bunches then are put in small fruit crates, in order to not damage the grapes and protect them all the way to the winery.
