Tasting Notes: Bright cherry-red in color. The nose presents floral note intermingled with aromas of red fruits, such as cherries, raspberries, and strawberries, along with a mineral note characteristic of the origin. The palate is fresh, lively and juicy, with a good balance, structure, and smooth tannins, all resulting in a wine with a long, pleasing finish.

Notes: The grapes were manually selected prior to destemming and were deposited uncrushed into stainless steel tanks for a 7-day pre-fermentation cold maceration at 46ºF for better extraction of color and aromas. The alcoholic fermentation took place with native yeasts at 77º–79ºC with 2 short pump-overs per day to extract only the most elegant tannins and obtain a fruitier, friendlier wine. The new wine then underwent malolactic fermentation naturally in French oak barrels and fouders. 27% of the wine spent 9 months in French oak foudres and 20% in previously used French oak barrels. The remaining 53% was kept in stainless steel tanks and cement eggs to contribute fruitiness and complexity to the final blend.

Food Pairing: Ideal complement for grilled fish, Asian sweet and sour preparations, mushroom risotto, vegetable-stuffed pasta, terrines or artesian pate. Service temperature of 13–14ºC.

The Domain: Viu Manent wines are made with grapes from their own properties in the Colchagua Valley in Chile’s Central Zone, 130 km (80 mi) southeast of the capital, Santiago. The winery’s 254 hectares (627 acres) are divided among vineyards in San Carlos, La Capilla, and El Olivar.

Located 140 kms south of Santiago, is located between 34 º 15 ‘and 34 º 50′ south latitude and 72 º 00 ‘and 70 º 15′ W.

The southernmost portion of the Rapel Valley is one of Chile’s best known wine regions and has earned much applause for its full-bodied Cabernet, Carménère, Syrah, and Malbec, and its wines regularly appear high on the world’s lists of leading wines. The majority of the wineries are concentrated in the center of the valley, although new plantations climb hillsides and explore the western frontier toward the sea.
