Serra da Estrela (Queijo Serra da Estrela) is the king of Portuguese cheese and has been made for centuries by shepherds in the mountains of Serra da Estrela. It is a  raw sheep’s milk cheese prepared using Bordalaira ewe’s milk. While making this hand-made cheese curds are broken up by hand. Serra da Estrela is soft, spreadable cheese with rich, intense flavour.
