Already the shepherds in the 12th century strengthened themselves at the campfire with this full-flavored firm cheese. Melted on the open fire, the softened surface was "scraped" directly from the half wheel with a knife and enjoyed on a piece of bread or potatoes. According to writings of monasteries in Obwalden and Nidwalden, it is believed that "Bratchäs", as it was called at that time, was also one of the favorite dishes of the freedom fighter Wilhelm Tell in 1291. Today's name was derived from the French term "racler", which means "to scrape off".
