The fine, mildly seasoned Appenzeller is stored for at least 4 months. It is treated with a mysterious herbal aspic and is one of the greatest Swiss cheese specialities. The gentle Appenzeller hill landscape with its healthy, full-bodied herb grass provides the ideal basis for the natural, robust raw milk from which Appenzeller cheese is made.
