This is a soft French artisan cheese made from unpasteurized cow's milk. The cheese is produced in the Gevrey-Chambertin in Burgundy. It is an Epoisse-type gourmet cheese. The orange and moist rind is washed with Marc de Bourgogne, a type of brandy. The ripening of the cheese takes place from the outside in. The ivory paste is strong with a sharp flavor and a buttery finish.
