Cantal is one of the oldest cheeses in production, dating to the pre-Roman era in the mountainous central region of France. Today the cheese is made on a large scale by a group of cooperative dairies who pool milk to produce these massive, 80 lb wheels of cheese. The AOC specifies three different ages, and Jeune (the youngest) truly shines as a cooking cheese. At this stage, the rind is formed but still quite thin and mild, making this a virtually zero-waste ingredient. The yogurty brassicas zing of Cantal Jeune persists after melting, making it ideal for gratin, flatbreads and savory pastries.
