Tasting Notes: Very beautiful pale gold color with soft green reflections. The nose is delicious, pure, floral and fresh. It first favors flowers, then it gives us notes of peaches and apricots, and finally we discover minerality. The palate is delicate and balanced. It combines maturity, elegance and freshness, supported in the end by a mineral touch.
Food pairing: A great partner for oysters on the half shell, scallops or salmon tartare.

The Domain: Domaine Gautheron is situated in the village of Fleys, to the east of the town of Chablis and overlooked by the steep slopes of les Fourneaux. This estate of only 25 hectares has been in the Gautheron family for five generations. The domaine makes traditional Chablis, with fermentation and maturation avoiding wood to preserve the fresh steely flavours and unique influence of the chalky vineyard soils. The old vine cuvees exceed 65 years old and are partly matured in oak. Since 2009 a 0.4ha plot of organic vineyard has produced the cuvee Emeraude.

Our Chablis are located on the right bank of the Serein. The soil is clay-limestone (Kimmeridgien). In its Chablis, the Gautheron estate seeks a balance between fruit and minerality.
