Tasting Notes: This Champagne is made with minimal intervention and no dosage, meaning it has less than three grams of residual sugar per liter. It's aged entirely in stainless steel tanks and then in a bottle for 3-5 years before disgorgement. Flavors of brioche, yeasty notes, hazelnut, baked apple, butter, and vanilla. It has a fine bead (small bubbles) and a crisp, refreshing finish.

The Domain: Our 4-hectare estate is located in the Côte des Bar, in Noé les Mallets, a village home to the highest slopes of Champagne.
Lovers of the land, and respectful of nature and people, we produced our first wines in 2011 and we committed all our production to organic farming in 2012.
All of our vineyards and our wines have been certified organic since 2015. We reject any chemical intervention or process. All our wines are produced naturally.

We attach great importance to Time.

Time for the vine to regenerate after harvest, thus respecting its dormancy.
Time for the terroir to express itself by favoring the natural cycle of life.
Time for the grapes to ripen, to gorge themselves with sugar, to be picked at the best time and to offer musts of a beautiful balance, naturally, thanks to the indigenous yeasts.
The time for our wines to be aged for a long time on their lees so that they are a pure reflection of their terroir, their climate.
The time for our cuvées to age in the cellar, at least 4 to 5 years, to express all their character, their vintage.
