Winery Story: Chavy-Chouet: two families, two coastal villages, united by a love of the land spanning seven generations. After six years at a wine school and with a wealth of experience in viticulture and winemaking from around the world, Romaric brings a new face to the estate. Solely at the helm since 2006, he watches over the 15 hectares of vines with rigor. Proud of his roots, he strikes a balance between rigor, tradition, and innovation.
Living and working in the heart of the greatest terroirs of Côte-d'Or requires humility.
Like our Cistercian predecessors, our dedication to cultivating our vines is unwavering. Our golden rule? To spare no expense in producing great wines.
Day after day, season after season, each of our actions is guided by an ultimate quest for quality. This ambition forces us to be very attentive and careful with our vines, visiting each vine up to 12 times a year.
Our ecological commitment is reflected in our daily, moderate plowing, which enables us to have replaced herbicides for over 30 years. Thanks to sulfur and copper, the only inputs used on our land, our plants are protected, strengthened, and supported to give their best.
