Alcohol : 13%
Grape(s) : Chardonnay
Localisation : Chablis, Burgundy, France
Tasting Notes : When it comes to typicity, depth, and texture, Gautheron’s “Vieilles Vignes” Chablis far surpasses the expectations of its village-level appellation and waltzes straight into Premier Cru territory. As such, you shouldn’t be surprised if and when this outperforms some of your friend’s Premier Cru bottlings (although they certainly will be!). In the glass, this spills out a vivid straw-yellow with neon green and silver reflections throughout. After about 15 minutes of air, gorgeous, high-toned aromas of salted yellow apple, lush white peach, apricot, and green apple peel pour out, followed lockstep by lemon and lime blossoms, finely crushed chalk, oyster shell, lees, a bouquet of wildflowers, and a faint hint of vanilla. All of these captivating notes carry over to an energized palate filled with the Chablisienne trademarks of precision, piquancy, and invigorating refreshment.
Food Pairing: Drink as an aperitif and with Fish, asparagus, grilled vegetables and goat's cheese.
The Domain : Domaine Gautheron is situated in the village of Fleys, to the east of the town of Chablis and overlooked by the steep slopes of les Fourneaux. This estate of only 25 hectares has been in the Gautheron family for five generations. The domaine makes traditional Chablis, with fermentation and maturation avoiding wood to preserve the fresh steely flavours and unique influence of the chalky vineyard soils. The old vine cuvees exceed 65 years old and are partly matured in oak. Since 2009 a 0.4ha plot of the organic vineyard has produced the Cuvee Emeraude.
