Food pairing: This Châteauneuf-du-Pape, which traditionally accompanies meats, venison and cheeses, can also surprise when served with desserts, particularly with chocolate, whose sweet roundness it magnifies through the principle of opposing flavors.
Winery Story: Domaine du Banneret is a small family estate of five hectares, located in Châteauneuf-du-Pape in the Rhône Valley. Coming from a confidential production , only 13,000 bottles are available each year. Two vintages are produced by Audrey and Jean-Claude Vidal : a red Châteauneuf-du-Pape vinified according to ancestral methods and a white Châteauneuf-du-Pape whose production does not exceed 2,000 bottles. The vines are old, they produce low yields but of quality. The average age of the vineyard is 70 years, the old vines are regularly replaced by new plants while respecting the original co-planting. The vineyard is managed with respect for nature thanks to the use of organic composts. The nine plots are located on different localities, the production therefore comes from a very varied terroir.
