Bleu de Laqueuille "La Mémée" is a pâte persillée cheese from Auvergne, France, made with pasteurized cow’s milk. It has a medium intensity, offering a balance of fondant and delicacy, making it a favorite among chefs. The cheese is aged for three months in humid caves, developing a supple texture that is softer than Bleu d’Auvergne. Its dry, naturally fleuri rind can show hints of blue-green, white, yellow, or red mold.
For wine pairings, it complements Banyuls, Maury, or Rivesaltes, enhancing its refined character. It’s a celebrated cheese, even earning a silver medal at the Concours Général Agricole de Paris in 2020.
