Location: Alto Adige (Südtirol), Italy – from two biodynamically farmed sites: the warm, west-facing Lieben Aich vineyard in Terlan (300m altitude, sandy porphyry soils) and the cooler, east-facing Campan vineyard in Kaltern (500m altitude, clay and morainal soils)

Tasting Notes: Brilliant yellow with green reflections. Aromas of apple, apricot, and a hint of sage. The palate is tightly knit and elegant, with a mellow texture and refreshing acidity that lingers on the finish.

Notes: Fermented with native yeasts in oak barrels after a six-hour maceration in the press. Aged nine months on fine lees. Certified biodynamic (Respekt-BIODYN) and vegan. No chemical inputs; vineyard biodiversity includes fruit trees, animals, and herbal teas used for vine health.

Food pairing: Roasted salmon with herb crust, white meats, vegetable terrines, or alpine cheeses like Hochpustertaler or Toma di Capra. Also lovely with spring pea risotto or grilled asparagus.

Winery Story: Manincor is a historic estate with over 400 years of winemaking tradition, now led by Count Michael Goëss-Enzenberg. Since 2005, the estate has embraced biodynamic viticulture, cultivating 50 hectares with a deep commitment to sustainability and terroir expression. The winery itself is a marvel—built underground to harmonize with the landscape and preserve energy. Every detail, from composting to hand-harvesting, reflects their philosophy: wine as the purest expression of nature and culture, crafted with a hand on the heart—man-in-cor.
