Tasting Notes: This Gigondas is red in colour and powerful, adding cocoa, spice and a fresh touch of eucalyptus to its palette of stewed red and black fruit aromas (cherry, blackberry, blackcurrant).
Food Pairing: When young, it goes well with spicy food, game and cheese. When mature, it goes well with spit-roasted poultry, meats and the most refined sauces.
The Domain: Dominique Ay produces on a very beautiful terroir with clay-limestone soils the archetype of a very beautiful Gigondas, full, pulpy, with a tight structure that requires at least 5 to 6 years of cellaring to express itself. Note that this Gigondas Raspail Ay shows a flawless consistency over the vintages, the secret of this success being partly due to the fact that the estate produces only one cuvée, and it is aged in large tuns for at least 24 months.
