Tasting Notes: Pale lemon pulp in color, this has fascinating aromas of orange blossoms, green apples, sliced lemons, and chalk dust that burst out as you swirl your glass. The fresh and pure palate has flavors of crisp pears, lemons, and limes with subtle herb nuances. The lively finish lingers, leaving a sense of ripe citrus and chalky minerals.

Food pairing: Enjoy chilled as an aperitif, or indulge with oysters or other fresh shellfish.

The Domain: Domaine de Chantemerle was founded in the 1960s by Adhemar Boudin, the father of winemaker Francis Boudin. It wasn't until the 1970s when the family decided to produce wine full-time; in 1981, Francis joined his father and began to cultivate the family's Chardonnay vines in Chablis.

The Boudin family maintains some 35 acres of vines yet produces just three Chablis wines: a "straight" Chablis, sourced from vineyards in the villages of Villy and Chapelle; a premier cru 'Fourchaume'; and a rare premier cru 'L'Homme Mort."

Crucially, Francis Boudin ages his wines exclusively in stainless steel tanks. He believes that the influence of French oak barrels can mask the natural aromas and texture of Chardonnay from Chablis.
