Apple & Grape Wine

This bottling was done as a special Collaboration with our good friends at Lightwell Survey.
30% Vidal Blanc, 20% Petit Manseng + 30% Harrison, 20% Golden Russet

Both grapes and apples were pressed at the end of September. 300 liters of fresh cider was trucked to Lightwell Survey, blended with the white must, then split 50/50. Each lot was fermented with native yeasts in their respective cellars but stylistic imprint varied. Our version was gravity feed into a combination of neutral french oak and glass demijohns. After completing primary fermentation, it rested undisturbed until the middle of February 2021. Upon racking the wine off its gross and fine lees, it was bottled still without the use of SO2 at any point.
This collaboration was born out of a great relationship and a deep admiration for both Sebastian and Ben. We felt honored when Sebastian featured our 2018 Dickie Brothers as part of his Primrose wine club, buying every case our distributor had all the while during the peak of a pandemic. Ben Jordan has always been an incredible mentor to us, helping us navigate the Virginia wine industry from day one, eager to share and discuss methodology knowing a rising tide lifts all boats. This co-ferment is a great representation of this collaboration; energetic, super expressive, and down right just fun. Our version shows the depth and roundness gained from barrel fermentation while Lightwell’s rendition yields more freshness and purity.
