This washed rind from Italy looks like a taleggio with its thin supple orange rind and white semi soft paste. Cheesemaker Giovanni De Martins works exclusively with “Lacaune” ewes, which live in a semi-wild state on defined plots of land in the province of Cremona in Lombardy. They feed on wild pasture grassland, supplemented with invaluable natural fodder.
