Grape(s): Cabernet Sauvignon
Localization: Napa Valley, California, USA
Tasting notes: Deep lush color, with aromas reserved out of the gate, notes of dried and fresh herbs, raspberry, blackberry, and cherry nuances. The palate shows flavor intensity but also a compelling sense of restraint. The velvety and firm tannins undulate in waves finishing with good length.
Food pairing: Enjoy this fine Cabernet with hearty roasts, leg of lamb, Asian dishes, and red sauce pasta dishes.
Description: Napa Valley, the premier California growing region for Bordeaux-style reds was blessed once more with a trouble-free growing season. The temperatures were moderate and absent any heat spikes.
The grapes were picked at optimum sugar levels with good acidity and vinified in small tanks. In order to extract flavor and color, some of the lots were cold-soaked with gentle pump-overs. Fermentation was started with a yeast specifically chosen to enhance mouthfeel and texture. The juice was fermented on the skins for 16 days with two pump-overs a day, benefitting the color and tannin structure. The wine was gently pressed off with only a fraction of the press wine reserved for the final blend before spending time in new and neutral French Oak. During extended barrel aging the wine was racked twice resulting in a more subtle and velvety tannin structure.
