The name means under the ash, which is how this cheese is aged coated in ash with a mix of spices thrown in. The cheese is a pale ivory with stark contrasting flecks of black truffle. The earthy spice of the truffle plays well with the mild lactic cheese. The paste has slightly chewy texture that makes it perfect for snacking.
