This is 100% organically-grown Sangiovese from estate vineyards in the calcareous clay soils of the Covignano Hills near Rimini, in Italy’s Romagna region east of Florence and southeast of Bologna. It was hand-grown, hand-pruned, hand-trellised, hand-de-leafed, and hand-harvested. Did I mention they like working by hand? The hand-picked fruit from their vineyards at 500+ feet asl was fermented cleanly and naturally with indigenous yeast in stainless steel tanks. Aging, too, was in steel on the fine lees. It lasted about 10 months, and included regular batonage to add depth and mouthfeel.
