This aged raw sheep milk cheese is made by the banks of the Duero River, next to the town of Sardón de Duero by one of the oldest family haciendas in Spain. Aged for over a year this dry but fatty cheese has a bright lemony acidity that finishes sharp and seems to dissolve on the palate.
