A Chef, his brother, and their mother. North Country Charcuterie is a family-owned company handmaking cured meats and fresh sausages in Columbus, Ohio. We source humanely raised pork from nearby farms, use ingredients from Ohio makers including craft beer, cheese, wine, herbs, and spices, and cure everything at our own USDA-inspected facility. Is that mold on my salami?! YES!! We will not refund or replace moldy salami. Mold is a necessary part of our traditional curing process and is very similar to mold on cheeses like Brie and Blue Cheese. It’s normal, harmless and safe to eat. The mold is a living organism and it is most commonly white, sometimes it grows a lot (covering the entire link), while other times it grows very little (just a few spots) or not at all! It is variable and can evolve into many colors from bright white to gray to dark green to dark blue. The easiest way to get rid of the mold is to peel off the natural casing or wipe off the mold with a damp cloth.
